Maple Carrot Cupcake Recipe
Chocolate or vanilla are most people’s go-to, but what about a cupcake recipe that’s a little less common? It’ll only take you fifteen minutes to make these.
First, add these ingredients into a large bowl:
- 1 cup of sugar
- 2 cups of all-purpose flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of baking soda
- A pinch of salt
In another bowl, combine four eggs, a cup of canola oil, and half a cup of maple syrup. Then, add three cups of grated carrots. Fold this bowl into the first bowl and mix them together.
After pouring the mixture into a cupcake pan, bake them for twenty minutes. While it’s cooling, stir together these ingredients for the frosting:
- 8 ounces of cream cheese
- 1/4 cup of softened butter
- 1 teaspoon of vanilla extract
- 1/4 cup of maple syrup
- A handful of walnuts
Banana Cupcake Recipe
Ready for another cupcake recipe? Nothing will cheer you up quite like banana cupcakes.
To make them, stir three mashed bananas into one cup of white sugar. Then add two eggs, one at a time. Lastly, add these ingredients and mix well:
- 3/4 cups of vegetable oil
- 2 teaspoons of baking soda
- 3 tablespoons of buttermilk
Then, add as many pecans as you want. Cook these at 300 degrees for 20 to 30 minutes.

Zucchini Cupcake Recipe
Making cupcakes with zucchini and orange juice? You bet. First, combine these ingredients in one bowl:
- 1 1/3 cups of sugar
- 3 eggs
- 1/2 of orange juice
- 1 teaspoon of almond extract
Then, add these dry ingredients to the same bowl:
- 2 1/2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 2 teaspoons of ground cinnamon
- 1/2 teaspoon of ground cloves
These should bake at 350 degrees for 20 to 25 minutes.
Next comes the frosting. For this one, you’ll need to break out your saucepan. Bring these ingredients to a boil:
- 1 cup of brown sugar
- 1/4 cup of two-percent milk
- 1/2 cup of butter
When it comes to a boil, stir it for a minute or two, or until it thickens. Remove the saucepan from heat and add one teaspoon of vanilla extract. Once the mixture has completely cooled, add two cups of confectioners sugar.
